Sourdough Discard Pumpkin Spice Muffins

Soft, warmly spiced pumpkin muffins made with sourdough discard and simple pantry ingredients. Use cold discard straight from the refrigerator or room temperature discard from the counter, then add walnuts, chocolate chips or both.
